Smoked Black Cardamom
Black Cardamom is a smoky, complex spice beloved across South and Central Asia. A larger cousin of cardamom, these pods are pink and purple when fresh, and they turn black as they're smoked over an open fire. There is a strong smokiness to this spice, but also a peatiness with a green and slightly bitter after taste. It is a bit reminiscent of a nice scotch to me. It's a more resinous and bold flavor then the sweeter yellow and green cardamom. It works really well in dishes that need to cook for hours, and I think steeping in rum or whisky could lend itself really well to the flavor profile. I have found that a pinch in a really deep dark chocolate has really lovely results. If you want that more peaty earthy flavor to shine add it to cold dishes like a yogurt sauce or dressing. Works really well with citrus.
